Pork Stir Fry
- 1.25 lbs pork tenderloin, sliced into medallions
- 1/2 cup Basmati Rice
- 1/2 cup Frozen Edamame
- Taylor Farm Stir Fry Kit
- 1 TBS Chilli Pepper paste
- 1 cup Chicken Broth
- 1/2 TBS garlic powder
- Extra virgin olive oil (about 1 TBS)
DirectionsHeat chicken broth in a pan until boiling. Next add Basmati rice and mix. Cover with a lid and simmer on low heat for about 15 minutes. Once finished remove from heat complete.
Preheat oven to 400 degrees. Slice porker tenderloin into medallions and spread onto greased pan. Season with a pinch of salt and garlic powder. Cook in 400 degree oven for about 12 minutes or until meat is almost heated through.
Meanwhile heat a skillet on medium high heat. Add Canola Oil or Extra virgin olive oil to pan, add veggies from stir fry kit and edamame. Place Teriyaki sauce from stir fry kit to the side for later. Heat over medium high heat until vegetable start to soft. Next, add half of the teriyaki seasoning packet (my family doesn’t care for the whole package of seasoning), chill paste and cooked pork. Combing, Cover and cook on medium a few more minutes until pork has finished cooking.
Serve over salad mix for a lighter lunch version or over rice or quinoa for a heartier meal.
