Toss sweet potatoes and shrimp with avocado oil in a bowl, season with garlic powder.
Place these on grill and let cook for about three minutes. Flip and repeat on the other side. If sweet potatoes are not cooked through flip again and continue until the potatoes are the texture that you like.
Meanwhile, combine tomatoes, pineapple and tomatillo salsa in a bowl. Set aside.
When all food is cooked, arrange spinach in a bowl, top with shrimp and salsa.
