Spray a large skillet with non stick spray. Heat over medium high heat, add zucchini and peppers to the skillet. Continuously stir for 4-5 minutes or until zucchini has softened. Remove from skillet and set aside.
Spray skillet again and add shrimp, flipping shrimp after 2-3 minutes or when shrimp has turned pink.
When shrimp is cooked, add zucchini and all remaining ingredients besides cilantro and green onions to the skillet, Toss to coat.
