Shrimp Pad Thai with Zucchini Noodles

  • 1 lbs shrimp, thawed and peeled
  • 3 zucchini, spiralized or sliced thinly
  • 1 red pepper, sliced thinly
  • 3 green onions, chopped small
  • 1/4 cup cilantro, chopped
  • 1 TBSP garlic minced
  • 1/2 TBSP ginger minced
  • 3 TBSP ketchup or tomato paste
  • 1 TBSP almond butter
  • 1/2 TBSP honey
  • 2 TBSP fish sauce
  • 2 TBSP rice vinegar


  1. Spray a large skillet with non stick spray. Heat over medium high heat, add zucchini and peppers to the skillet. Continuously stir for 4-5 minutes or until zucchini has softened. Remove from skillet and set aside.
  2. Spray skillet again and add shrimp, flipping shrimp after 2-3 minutes or when shrimp has turned pink.
  3. When shrimp is cooked, add zucchini and all remaining ingredients besides cilantro and green onions to the skillet, Toss to coat.
  4. Serve and top with green onion and cilantro.
