Protein Pumpkin Muffins
- 2 cups Kodiak Pumpkin Pancake Mix (Buttermilk mix would work as well, their Pumpkin mix is seasonal)
- 1 egg
- 1 scoop Vanilla Protein Powder
- 1 tsp pumpkin pie spice
- 1 cup water
- Pre-heat oven to 350 degrees.
- Combine all ingredients in a medium sized bowl and mix. Set aside.
- Spray muffin tins with nonstick cooking spray. Add mix to muffin tin. Cook for 14-16 minutes. Serve as a snack!
