Protein Pumpkin Muffins

  • 2 cups Kodiak Pumpkin Pancake Mix (Buttermilk mix would work as well, their Pumpkin mix is seasonal)
  • 1 egg
  • 1 scoop Vanilla Protein Powder
  • 1 tsp pumpkin pie spice
  • 1 cup water


  • Pre-heat oven to 350 degrees.
  • Combine all ingredients in a medium sized bowl and mix. Set aside.
  • Spray muffin tins with nonstick cooking spray. Add mix to muffin tin. Cook for 14-16 minutes. Serve as a snack!
