Pesto Egg Bake

The combination of pesto, eggs, and mixed veggies is the best!  Enjoy your pesto egg bake on day 1 and reheat another serving for breakfast the next day, meal prep lifesaver right here!

  • 6 eggs
  • 4 egg whites
  • 1-2 TBSP pesto
  • 2 cups spinach, chopped
  • 1 cup tomatoes, chopped
  • 1 large carrot, shredded


  1. Pre-heat oven to 350 degrees. Spray an 8x8 baking dish with cooking spray.
  2. Add all eggs and pesto to the baking dish and mix together to break up eggs.
  3. Next, add in carrots and spinach. Stir. Top the egg mixture with tomatoes. Bake for 25 minutes or until the middle of the egg bake is set and not wiggly.
  4. This is great for meal prep. Seperate your portions into indivudal containers and microwave for 30-60 seconds before you run out the door in the morning.
