One Dish Honey Mustard Chicken and Potatoes

Ingredients
- 1.5 lbs chicken thighs
- 1 small bag of red potatoes (about 1 1/2 lbs), quartered
- 1 TBSP garlic powder
- 1 TBSP avocado oil
- 2 TBSP dijon mustard
- 1 TBSP honey
- Parsley (optional)
Instructions
- Preheat oven to 375 degrees
- Add chicken and potatoes to a baking dish
- Next combine all remaining ingredients except parsley to a bowl and mix to combine.
- Drizzle this oil mixture over all the chicken and potatoes
- Bake for approximately 25 minutes or until chicken is cooked through. Serve topped with chopped parsley and with a side salad.
