Mushroom & Leek Frittata

This recipe for a mushroom and leek frittata is one of the easiest egg bakes you can make! Mix and match whatever veggies you prefer then add your choice of herbs. Add it to your egg mix and you are set to bake!

Ingredients

  • 4 eggs
  • 3 egg whites
  • 1/2 cup cup chopped mushrooms
  • 1/2 cup chopped leeks
  • 1/2 TBSP rosemary, chopped
  • 1 TBSP almond milk
  • 1/4 TBSP garlic powder
  • pinch of salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a baking dish with avocado or olive oil.
  3. Mix all ingredients together and add to baking dish.
  4. Bake for 30-35 minutes or until center of bake is set. Serve with mixed greens
