Such a simple but healthy balance of protein, healthy fats and veggies. Grab that crockpot and start the beef stroganoff in the morning before work and quickly throw together some cauliflower rice after work to serve with it.
1 cup bone broth or any stock/broth you may have on hand
1/4 cup coconut aminos (a sub for soy sauce)
1/4 cup red wine vinegar
1/2 tsp onion powder
1 TBPS garlic powder
2-3 TBSP cornstarch or arrowroot powder
1/4 cup almond milk
FOR CAULIFLOWER RICE
1 package cauliflower pearls
1 TBSP grass-fed butter
Add cubed meat to crockpot and set crockpot to low for 6-8 hours or high for 3-4 hours.
Combine remaining stroganoff ingredients with exception to the cornstarch/arrowroot powder and almond milk the the crockpot and stir to ensure all meat is coated in sauce. Cover and cook. When 30 minutes remain for cooking, remove 1/4 cup of the liquid from the crockpot. Add the cornstarch into this mixture and stir until dissolved.
Add this cornstarch mixture to the crockpot and stir, cover and continue cooking for 30 more minutes. Before serving add in almond milk
While waiting the 30 minutes, heat butter in a skillet and saute cauliflower pearl for about 3-5 minutes. Continuously stir to cook cauliflower.
