  • 1lbs pork tenderloin, sliced into medallions
  • 1 small cucumber, sliced thinly
  • 3 radishes, sliced thinly
  • 1 red pepper, sliced thinly
  • 1 large carrot, sliced thinly
  • 3 green onions, sliced
  • 1/4 cup cilantro chopped
  • 1 cup sauerkraut
  • 1 cup shredded brussel sprouts
  • 1 cup snap peas
  • 1 cup dry basmati rice, cook according to package instructions
  • 1 TBSP avocado oil
  • Marinade
  • 2 TBSP liquid aminos
  • 1 TBSP rice vinegar
  • 1 TBSP fish sauce
  • 2 TBSP ginger paste
  • 1 TBSP garlic powder


  1. Cook rice according to package instructions.
  2. Next add all marinade ingredients to a plastic bag and add pork. Set aside and let sit until the rice is done cooking.
  3. Next heat a large skillet over medium high heat, add avocado oil. Add in pork and continue cooking for 3-4 minutes. Flip and cook other side until no longer pink. Remove pork from skillet and set aside.
  4. Add snap peas, peppers and brussel sprouts to skillet. Continue stirring and cooking for 4-5 minutes or until veggies start to soften.
  5. Serve in a bowl with rice, veggies and meat. Add more liquid aminos to individual bowls if desired.
