Lemon Blueberry Power Muffins
A healthy treat for little ones lunch boxes or a snack on the go.

Ingredients
2 Cups Kodiak Power Cake Buttermilk Mix
1 cup Unsweetened Vanilla Almond Milk
1 large Egg
1 Banana mashed
1 Cup Organic Frozen Wild Blueberries
1/4 Cup Dark Brown Sugar
5.30 oz Chobani lemon blended yogurt
Directions
- Pre-heat oven to 350 degrees. Spray a muffin tin with non stick spray.
- In a medium bowl combine Power Cake mix with brown sugar. Create a “well” in the middle of this mix, and add all other ingredients except wild blueberries to the middle of the well you just created.
- Combine all wet ingredients added and stir to combine all ingredients in the bowl. Fold in wild blueberries.
- Fill muffin tin 3/4 full and cook for 25-30 minutes. Let cool before removing from pan.
Note: Can add white chocolate chips if you like a sweeter version.
