A quick healthy dinner that can be prepared quickly for those on the go nights. These are even popular in my house for the kids to take in their lunchbox to school cold.


  • corn tortilla soft shell
  • 1/4 cup sloppy Joe mix
  • shredded cheddar cheese
  • spinach, chopped


Heat panini maker until ready or pre-heat skillet to medium high heat.

Add all ingredients above into corn tortilla soft shell in amounts that fit your preference. Fold shell in half. Add to panini maker and heat until timer indicates the shell is done. If making in a ski,,et, add folded shell to skilled and place heavy mug or other item on top of folded shell. Cook until bottom of shell has started to brown (about 2 minutes) and flip to other side to repeat.

Serve with fresh salsa if desired. IMG_0550.JPG.jpeg
