Turkey Quinoa Chilli

Ingredients

  • 1/2 yellow onion, chopped
  • 1/2 red or yellow pepper, chopped
  • 1/4 cup julienned carrots
  • 1 lbs extra lean ground turkey
  • 1 TBS Garlic Powder
  • 1 oz can Fire Roasted Diced Tomatoes
  • 1 cup Cooked Quinoa (about 1/2 cup dry quinoa)
  • 2 TBS Chili Powder
  • 1 TBS Ground Cumin
  • 1 tsp Cinnamon
  • 1 TBS Brown Sugar
  • 1 tsp Salt
  • 1 (15 oz) can Great Northern Beans drained
  • ¼ cup chopped Cilantro
  • 1/4 cup cooked green lentils
  • 1TB Extra Virgin Olive Oil

Directions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Saute onion, pepper and carrot until almost tender.
  3. Add ground turkey and cook until almost all pink is gone.
  4. Add all remaining ingredients except cilantro and cheese.
  5. Heat until all ingredients are warmed through. Then add cilantro and Mozzarella cheese.
  6. Serve with other items such as guacamole, plain greek yogurt (instead of sour cream) etc.
